We helped a talented chef make an even bigger name for himself in Baltimore—and beyond.
PartsandLaborButchery.comSpike Gjerde is a successful chef, a champion of Baltimore, and a friend of War Horse. When we asked him to help us bring some of the best merchants to Belvedere Square Market, he generously obliged. And when he showed us his new restaurant—a whole-animal butchery located in an old tire shop—we jumped at the chance to invest.
We supplied the funds for Chef Gjerde to build his restaurant, Parts & Labor. In turn, he churned out an exceptional concept: a whole-animal butchery and full-service restaurant focused on local meats and vegetables. Beyond their tasty cuisine, the restaurant educates diners about local foods, unique cuts, and show-stopping presentation.
Today, Parts & Labor is earning rave reviews—and so is Chef Gjerde. After the launch of Parts & Labor, Gjerde went on to receive the 2016 James Beard Award for Best Chef in the Mid-Atlantic. Bloggers, reviewers, and diners from all over the area are showering Parts & Labor with praise, and gathering at the restaurant to learn, share, and of course, indulge.
